Ingredients
- Boneless Chicken pieces, thigh meat preferred - 500 Grams, cut into medium sized strips
- Ginger - Garlic paste - 1 1/2 Tablespoon
- White or Black Pepper powder - 1 Teaspoon, adjust according to your preference
- Hung Curd / Yogurt - 1-2 Tablespoon, heaped
- Cream Cheese - 1 - 2 Tablespoon OR Fresh Cream - 1/2 cup
- Salt to taste, approx: 1 Teaspoon, adjust according to your taste
- Butter for brushing
For Cashew Nut - Almond paste:
- Cashew Nuts - 10 - 12 Nos
- Blanched Almonds - 4 - 5 Nos
- Warm Milk - 1/4 cup
To Garnish:
- Chopped coriander leaves
- Lemon Wedges
- Sliced Onions
Directions
Initial Preparation:
- Clean and wash the chicken pieces. Drain the water completely.
- Soak cashew nuts and blanched almonds in warm milk for 10-15 minutes and then grind to a fine paste.
Marinate the Chicken:
- In a bowl, add chicken pieces, yogurt, cream cheese or fresh cream, cashew - almond paste, ginger-garlic paste, pepper powder, salt and combine well.
- Then refrigerate it for at-least 2 hours. You can keep the marinated chicken refrigerated up-to 48 hours, for a super soft and creamy textured malai tikka.
Cooking Chicken:
- Divide the marinated chicken pieces among skewers, by folding the marinated chicken strips into half and then thread it onto skewers as shown in the video. Set aside.
- If you are using wooden skewers, soak them in water for 30 minutes.
- Cooking in Oven: Preheat oven to 220°C or 425°F. Arrange the prepared chicken skewers in a lined baking pan. Bake the chicken for 8-10 minutes on one side then flip and cook for another 6-8 minutes or until fully cooked and slightly browned. Don't forget to baste the chicken with butter in between.
- Cooking in Air Fryer: Preheat the air fryer to °200C or 400°F. Arrange the prepared chicken skewers in the Air Fryer basket. Avoid overlapping the chicken skewers. Cook for 6-8 minutes on one side then turn and cook for another 6-8 minutes or until fully cooked and golden brown spots on top. Don't forget to baste the chicken with butter a couple of times.
- Grilling Chicken in a Pan: Heat 1 - 2 tablespoon of butter in a pan. Place the skewers and fry for 5-6 mins on one side, then turn them to other side and fry for another 5-6 mins or until fully cooked on medium heat.
- Sprinkle chopped coriander leaves on top, and serve immediately.
