Ingredients
- Bamboo Rice - 3/4 cup
- Full Fat Milk - 2 Litre
- Sugar - 1 - 1.5 cups, adjust according to your taste preference
Directions
- Clean the bamboo rice first. Take 3/4 cup of bamboo rice in a bowl. There is a chance of having small stones in the bamboo rice. After removing all that, wash the bamboo rice well and let them soak for 10-12 hours.
- Heat 2 litres of milk in a large, heavy bottomed pan.
- Add in the sugar and combine well.
- When the milk starts to boil, lower the heat. Boil the milk on medium heat till the quantity of milk reduces to half. It will take about 1 to 1 1/2 hours. By this time, the color of the milk will be a light pink color. Stir at regular intervals. Don't allow to form milk skin/cream skin on top.
- While the milk is ready, let's cook the bamboo rice. Transfer the soaked bamboo rice to a pressure cooker.
- Add enough water to it and pressure cook till the bamboo rice is cooked well. It will take about 10 - 15 whistles. After a whistle on high heat lower the flame. Then cook on medium heat until done.
- Remove the cooker from the heat. After the pressure is released, open the cooker and strain the cooked bamboo rice.
- Add this into the boiling milk and mix well.
- Now cook the payasam on medium heat for about 20-30 minutes until it reaches the desired consistency according to your preference. Stir at regular intervals.
- After that, remove from heat, serve warm and Enjoy :)
NOTES
- There is a chance that, Paal Payasam will become thick as it sits. If needed, it can be diluted with hot or warm milk.
