Ingredients
  • Boneless Chicken, cleaned and washed - 500 Grams, cut into small cubes
  • Oil to deep fry the chicken
For First Marination:
  • Ginger - Garlic paste - 1 Tablespoon
  • Garam Masala - 1 Teaspoon
  • Cumin powder - 1/4 Teaspoon
  • Kashmiri chili powder - 1/2 Tablespoon
  • Salt - 1/2 Teaspoon
  • Yogurt - 2 Tablespoons
For Second Marination:
  • Rice flour - 2 Tablespoon
  • Corn flour - 2 Tablespoon
  • Egg - 1 large
  • Salt to taste
For Sauce:
  • Cumin seeds - 1/2 Teaspoon
  • Finely chopped garlic - 1 Tablespoon
  • Green chillies - 2 - 3 Nos, chopped
  • Ginger - garlic paste - 1/2 Teaspoon
  • Kashmiri chili powder - 1/2 Teaspoon
  • Pepper powder - 1/2 Teaspoon
  • Water - 2 Tablespoon
  • Vegetable oil - 1/2 cup
  • Curry leaves
  • Salt to taste
Directions
    Initial Preparation:
    1. Cut boneless chicken into small cubes, then clean and wash the chicken, set aside.
    2. Add in the ginger-garlic paste, garam masala, cumin powder, kashmiri chili powder, salt, yogurt and mix well. Set aside for 15 - 20 minutes.
    3. Just before frying the chicken, add the rice powder, corn flour, egg, enough salt into the marinated chicken and mix well. Adjust salt at this step.
    Frying Chicken:
    1. Heat oil in a heavy bottomed pan on medium heat.
    2. Once the oil is hot enough, reduce the heat to medium, add in the marinated chicken pieces and fry until deep golden and crispy on medium heat. Fry the chicken as batches, do not over crowd the pan. Don't forget to flip the chicken pieces to both sides for even frying.
    3. Once the chicken is ready, transfer to a bowl and set aside.
    Sauce Preparation:
    1. Heat half cup of oil in a heavy bottomed pan on medium heat. You can use fresh oil or use the oil which is used for frying the chicken.
    2. Once the oil is hot, splutter cumin seeds.
    3. Add in the chopped garlic and saute until the raw smell disappears.
    4. Add in the chopped green chillies and saute for few seconds.
    5. Add in the ginger-garlic paste and saute until the raw smell disappears.
    6. Then add in the kashmiri chili powder, pepper powder, curry leaves and saute few seconds on low heat.
    7. Add 2 tablespoons of water, salt and mix well.
    8. Add in the fried chicken pieces and combine well.
    9. Once the chicken pieces are coated well with the sauce, remove it from heat and serve hot :)
