Chinese Egg Fried Rice

Ingredients
    For Cooking Rice:
    • white jasmine rice - 1 1/2 cups
    • Water, 1 1/4 cup water for 1 cup of rice; So we need ( 1 3/4 cup + 1/8 cup ) of water in total
    For Frying Eggs:
    • Butter - 1 Tablespoon
    • Eggs - 3 large
    • Salt & Black Pepper powder to taste
    For Fried Rice:
    • Vegetable Oil - 2 - 3 Tablespoon
    • Garlic - 3 - 4 cloves, minced
    • Sweet Onion, chopped - 1/2 cup
    • Carrots, chopped - 1/2 cup
    • Fresh or Frozen Green Peas - 1/2 cup
    • Spring Onion whites - 2, chopped
    • Salt - 1 Teaspoon
    • Sugar - 1/2 Tablespoon
    • Dark Soy Sauce - 1 1/2 - 2 Tablespoon
    • Spring Onion greens - 2, chopped, to garnish
    Directions
      Cooking Rice:
      1. Heat 1 1/2 cups of jasmine rice and enough water in a pan. 1 1/4 cup of water is used for cooking 1 cup of jasmine rice. So we need about ( 1 3/4 + 1/8 cup ) of water in total.
      2. Stir occasionally. Otherwise there is a chance of burning.
      3. When the water boils well, reduce the heat to minimum. After that, cover and cook for 12 minutes on very low heat.
      4. Once the rice is cooked, turn off the flame and keep it covered for 10 minutes. After that, fluff up the rice with a fork or spatula. Set aside. Once cooled, keep it in the refrigerator for 1 - 2 days.
      Fried Rice Preparation:
      1. Take 3 eggs, enough salt and black pepper powder in a bowl and beat well. Set aside.
      2. Heat a tablespoon of butter in a large wok. Add the beaten egg to this and stir well. Once the egg is half cooked, transfer it to a bowl.
      3. Now heat 2-3 tablespoon oil in the same wok, add in 3-4 chopped garlic and stir on medium heat until it turns golden.
      4. Add in the chopped yellow sweet onion, spring onion whites and sauté for a minute.
      5. Then add in the chopped carrots, fresh or frozen green peas and sauté for 2 minutes on high heat.
      6. Now add 1 tsp salt and 1/2 tbsp sugar into it and mix well. Be careful to do all the following steps on medium-high heat.
      7. Add in the cooked Jasmine rice, press the rice with the back of a spoon towards the wok to break the rice lumps.
      8. After that add in the fried eggs and mix well.
      9. Then add in the soy sauce and enough black pepper powder, mix well.
      10. Now stir the rice well for 3-4 minutes on high heat, and don't forget to press the rice with the back of the spoon towards the wok to fry the rice properly.
      11. Taste and adjust the seasonings to your preference.
      12. Now remove from heat, add in the finely chopped spring onion greens and serve hot and enjoy with Mongolian Chicken or with your favorite curry.
      NOTES
      1. 1 1/4 cup of water is used for cooking 1 cup of jasmine rice. So we need about 1 3/4 + 1/8 cup of water in total.
      2. Jasmine rice can be used washed or unwashed. I have washed it.
      3. Chinese fried rice is usually made with rice that has been cooked at-least a day in advance. So make sure to cook the rice at-least a day before making fried rice.
      4. If you don't have time to do that, you can refrigerate the rice for at least 2 hours after making it.
      5. Please remember, it should be kept in the fridge, not in freezer.
      6. Due to the high starch content in Jasmine rice, you can see that the rice is lumpy after cooking. When it is fried well in the wok, the rice will be separated.
