Ingredients
  • Carrots - 500 Grams
  • Full fat Milk - 2 Cups
  • Sugar - 1/2 - 3/4 cup, adjust according to your taste
  • Ghee - 1 - 3 Tablespoons, adjust according to your preference
  • Cardamom Powder - 1/4 Teaspoon
  • Chopped Cashew Nuts & Almonds
Directions
    Initial Preparation:
    1. First peel the carrot, cut both sides, wash well, then grate the carrots using a hand grater.
    Halwa Making:
    1. Add the grated carrots in a heavy bottomed pan.
    2. Sauté until the water content evaporates completely, for about 10-12 minutes on medium heat.
    3. Add in the milk and cook until the milk evaporated completely on low-medium heat. Don't forget to stir occasionally. Otherwise there is a possibility of getting burnt.
    4. Once all the milk is absorbed by the halwa, add in the sugar and mix well. Sugar starts melting and the halwa will become watery again.
    5. Continue stirring until the melted sugar dried up, for about 10 - 15 minutes on medium heat.
    6. Once all the melted sugar is absorbed by the halwa, add in the ghee and cardamom powder.
    7. Continue stirring and roast the halwa for about 4-5 minutes on low-medium heat.
    8. Add in the chopped cashew nuts and almonds, continue stirring for about 2-3 minutes on low heat.
    9. Remove from heat. Serve warm and enjoy.
    NOTES
    1. I Used red color carrot to make carrot halwa.
    2. Red carrots are more flavorful and sweeter than the Orange carrots. You can also make Carrot halwa with orange carrots.
    3. As red carrot is a vegetable that is harvested during the winter season, Carrot halwa is usually a winter dessert in the northern parts of India.
    4. Grate the carrots by using the side with the larger holes of a hand grater. If you use the side with the smaller holes, the texture of the halwa will be changed, and it will become mushy.
