Kaju Katli Truffles, Kaju Barfi Truffles, Cashew nut Truffles

Ingredients
    For Truffles:
    • Cashew nuts - 200 Grams
    • Sugar - 3/4 cup
    • Water - 1/3 cup
    • Ghee - 2 -3 Teaspoons
    • Cardamom powder - 1/4 Teaspoon
    • Edible Dried Rose Petals - 1 Tablespoon, optional
    • Candy melts - 200 Grams
    • Crushed cashews and dried rose petals, for decorating
    Directions
      Initial Preparation:
      1. Grind the cashew nuts as batches to a fine powder, by using the PULSE option few times. Make sure to use the PULSE option, otherwise the cashews will release oil and turns into a paste.
      Cashew Dough Preparation:
      1. Combine 1/2 cup sugar and 1/3 cups of water in a heavy bottomed pan.
      2. Cook until one string consistency on low-medium heat. Stir occasionally.
      3. Add in the cashew powder as 2-3 batches and combine well after each addition, without any lumps.
      4. Keep stirring and cook until slightly thick on low-medium heat.
      5. Add 1 teaspoon ghee and mix until incorporated well.
      6. Then add in the cardamom powder, rose petals, 1 teaspoon ghee and mix well.
      7. Fold it using a spatula until the cashew mixture turns thick and starts to come together, for about 8-10 minutes on low heat.To check the dough consistency, take a small portion of dough and roll it with your fingers. You should be able to make a ball without sticking in your fingers.
      8. Keep it aside for 1 minute, upon cooling it should be firm like kaju katli.
      9. Transfer the mixture to a greased pan or parchment paper, allow to cool slightly.
      10. Make balls out of the dough, once the heat is managable to you. You can make about 15-16 small lemon sized balls out of it.
      11. Set aside the balls, allow them to cool completely.
      Cashew Truffles Preparation:
      1. Once its cooled completeltly, start to melt the chocolate melts.
      2. In a pan/oven-safe bowl, add in the candy melts. Double boil until completely melted - OR - Heat until completely melted in 30 second intervals in a microwave oven. Stir occasionally. Check Notes.
      3. Dip each balls in the melted chocolate and place it in the parchment paper lined cookie tray.
      4. Immediately sprinkle the crushed cashewnuts and rose petals on top of the truffles.
      5. Serve after the chocolate coating is firm.
