Ingredients
- Eggs – 3 large
- Onion – 2 medium sized( 300 Grams) , finely chopped
- Ginger - Garlic paste – 1 Tablespoon
- Green chilly – 2 Nos, finely chopped
- Curry leaves – 4-5 leaves, finely chopped
- Finely chopped coriander leaves - 1 Tablespoon
- Turmeric powder – 1/4 Teaspoon
- Black Pepper powder – 1/4 Teaspoon
- Red Chilly powder – 1/2 Teaspoon
- Garam masala powder – 1 Teaspoon
- Tomato Ketchup – 1 Tablespoon
- Water - 2 Tablespoon
- Sunflower Oil – 2 Tablespoon
- Salt - 1 Teaspoon, adjust
- Egg white - 1 large, for brushing
- Puff Pastry Sheet - 1
Directions
Initial Preparation:
- First take the puff pastry sheet out of the fridge to thaw as directed on the packet.
- Hard boil the eggs required to make the egg puffs. For this, take enough water in a pan and boil it.
- When the water boils well, add some salt and the eggs.
- After 12 minutes of boiling, remove the eggs from the hot water and place them in cold water for 2 minutes.
- After that, remove the shell of the eggs and cut each egg in half. Set aside.
Masala Preparation:
- Heat 2 tablespoons of oil in a pan.
- Add in the finely chopped onion, salt and fry until the onion turns golden brown on medium heat.
- After that, add ginger garlic paste, finely chopped green chillies and finely chopped curry leaves and saute until the raw smell disappears on medium heat.
- Add in the turmeric powder, chilli powder, black pepper powder, garam masala powder and saute on medium heat until the raw smell of the powder disappears.
- Then add in the tomato ketchup, water and mix well.
- Saute on medium heat till the water dries up completely.
- Add in the a finely chopped coriander, mix well and keep it off the flame.
Egg Puffs Preparation:
- Preheat the oven to 400 degrees Fahrenheit.
- Dust the work surface with some flour, then place the puff pastry sheet and gently roll to spread it slightly.
- Cut into 6 equal sized square pieces and set aside.
- Spread 1 tablespoon of masala on each slice and then place half of an egg. Put a little more masala on top of it.
- Now fold the four sides of the puff pastry piece towards the middle and apply little water to stick it.
- Repeat the process and prepare the rest of the puffs.
- Lightly beat an egg white and spread it over all the prepared puffs.
- After that, bake the puffs in the preheated oven at 400 degrees for about 12-18 minutes until the top of the puffs turn golden in color.
- Remove from oven and serve warm.
