Ingredients
- Matta Rice / Kerala Red Rice - 2 cups
- Green Cardamom- 5 - 6 Nos
- Grated Jaggery -1 to 1.5 cups, adjust according to your taste
- Grated coconut - 1 cup
- Dried Ginger - 1 small piece
Directions
- In a heavy bottomed pan, add two cups of washed and drained Kerala Red rice( Matta Rice) and fry over medium heat.
- When the moisture in the rice is gone, add in the green cardamoms and fry it on medium heat until the rice turns golden brown in color.
- Transfer it to a bowl. Once it cools down, grind the rice as 2-3 batches to a fine powder and keep it aside.
- Now add powdered jaggery and grated coconut and a small piece of dried ginger to a mixer jar and grind it to a fine paste.
- In a large bowl, add in the rice powder, coconut-jaggery mixture and mix well. Keep half a cup of roasted rice powder aside for later use.
- Make medium lemon sized balls out of the prepared dough, then roll each rice balls in the reserved 1/2 cup rice flour and keep aside.
- Make the rest of the rice balls in the same way. Store them in an airtight container at normal temperature for 1-2 weeks.
