Kerala Special Ariyunda Recipe, Kerala Special Rice – Coconut Ladoo, No sugar – No Ghee Rice Ladoo Recipe

Ingredients
  • Matta Rice / Kerala Red Rice - 2 cups
  • Green Cardamom- 5 - 6 Nos
  • Grated Jaggery -1 to 1.5 cups, adjust according to your taste
  • Grated coconut - 1 cup
  • Dried Ginger - 1 small piece
Directions
  1. In a heavy bottomed pan, add two cups of washed and drained Kerala Red rice( Matta Rice) and fry over medium heat.
  2. When the moisture in the rice is gone, add in the green cardamoms and fry it on medium heat until the rice turns golden brown in color.
  3. Transfer it to a bowl. Once it cools down, grind the rice as 2-3 batches to a fine powder and keep it aside.
  4. Now add powdered jaggery and grated coconut and a small piece of dried ginger to a mixer jar and grind it to a fine paste.
  5. In a large bowl, add in the rice powder, coconut-jaggery mixture and mix well. Keep half a cup of roasted rice powder aside for later use.
  6. Make medium lemon sized balls out of the prepared dough, then roll each rice balls in the reserved 1/2 cup rice flour and keep aside.
  7. Make the rest of the rice balls in the same way. Store them in an airtight container at normal temperature for 1-2 weeks.
