Kerala style Beef Stew Recipe

Ingredients
  • Beef - 500 Grams, cut into small pieces
For Cooking Beef:
  • Black Pepper Powder - 1/2 Teaspoon
  • Salt - 1/2 Teaspoon
  • Water - 1/4 cup
Whole Spices used:
  • Cardamom - 4 Nos
  • Cloves - 4 Nos
  • Cinnamon - 1 inch piece
  • Bay leaf - 1 Nos
  • Black Pepper Corns - 1 Teaspoon
For Stew:
  • Coconut oil - 2 Tablespoon
  • Onion - 1 medium sized, thinly sliced
  • Chopped ginger - 3/4 Tablespoon
  • Chopped Garlic - 1 Tablespoon
  • Green chillies - 2-3 Nos, sliced
  • Curry leaves - 1 sprig
  • Potato – 1 medium, cubed
  • Carrot – 1 medium, cubed
  • Medium thick Coconut Milk – 3/4 - 1 cup
  • Thick Coconut Milk – 1/2 cup
  • Black Pepper Powder – 1/2 Teaspoon
  • Garam Masala Powder - 1/2 Teaspoon, optional
  • Salt to taste - approx: 1/2 to 3/4 Teaspoon, adjust according to your preference
For Tempering:
  • Ghee - 1-2 Tablespoon
  • Finely sliced Onions - 1/4 cup
  • Cashew Nuts - 10 - 12 Nos
  • Raisins – 1 Tablespoon
Directions
    Initial Preparation:
    1. Clean and wash the beef pieces, then add into a pressure cooker along with the ingredients mentioned in 'For Cooking Beef'.
    2. Mix well and pressure cook for about 4-6 whistles or until the beef is cooked well.
    Beef Stew Preparation:
    1. Heat 2 tbsp coconut oil in a pan, add in the whole spices and fry for few seconds on medium heat.
    2. Add in the finely sliced onion, chopped ginger, garlic, sliced green chilies, curry leaves and saute until the onions turn translucent and light brown in color . Add little salt to fasten the process.
    3. Then add in the cubed potatoes, carrots and fry for 1-2 minutes on medium heat.
    4. Add in the cooked beef pieces along with the gravy, medium thick coconut milk and mix well.
    5. Cover and cook on medium heat for about 12-15 minutes until the vegetables are cooked well and the gravy is thick enough according to your preference.
    6. Now add in black pepper powder, salt and mix well. Add 1/2 tsp garam masala powder, if you want to use it. It's completely optional.
    7. Then add 1/2 cup thick coconut milk, mix well and cook for 1 – 2 minutes over low heat. Check and adjust the salt and pepper according to your taste preference at this stage.
    Tempering & Serving Instructions:
    1. Heat 1 tbsp ghee in a pan, add in the finely sliced onions, and fry until light golden in color on low-medium heat.
    2. Add in the cashew nuts and fry until slightly golden in color; Then add in the raisins and fry until they puffed up.
    3. Now pour the tempering over the beef stew. Remove the pan from heat and allow to cool for 10-15 minutes.
    4. Serve warm with Appam or Bread and Enjoy.
    NOTES
    1. It would be better to use Coconut Milk Powder Or Coconut Milk Cream to make the coconut milk. If you are using freshly squeezed coconut milk, there are chances the coconut milk to curdle.
    2. Add little water into the 'Coconut Milk Powder Or Coconut Milk Cream' to make 'Onnam paal' or 'Thick Coconut Milk' and add more water to make the 'Randaam Paal' or 'Medium thick Coconut Milk'.
