Makhana kheer recipe, Lotus seed Kheer, Phool makhane ki kheer

Ingredients
    For Roasting:
    • Cashew Nuts - 10 - 12, halved
    • Raisins - 1 - 2 Tablespoon
    • Lotus seeds Or Fox seeds Or Phool Makhane - 2 cups
    • Ghee - 1 Tablespoon
    For Grinding:
    • Cashew Nuts - 5 - 6 Nos
    • Almonds - 5 - 6 Nos
    • Pistachios - 5 - 6 Nos
    • Green Cardamom - 2 - 3 Nos
    • Saffron - few strands
    For Payasam Or Kheer:
    • Full Fat Milk - 2 cups, 500 ml
    • Chopped Almonds - 1 - 2 Tablespoon
    • Chopped Pistachios - 1 - 2 Tablespoon
    • Sugar - 1/4 cup, adjust according to your taste preference
    Directions
      Roasting and Grinding:
      1. Heat 1 tablespoon of ghee in a thick bottomed pan.
      2. Add in 10 - 12 cashew nuts and roast until golden in color.
      3. Once the cashew nuts turn slightly golden in color, add in 1-2 tablespoons of raisins and roast until the raisins puffed up.
      4. Remove from pan and keep aside.
      5. After that, add 2 cups of lotus seeds to the same pan and roast for 2-3 minutes on medium heat, then remove from pan and set aside.
      6. Once it's slightly cooled, take half a cup of roasted lotus seeds in a mixer jar, add in 5-6 cashew nuts, 5-6 blanched almonds, 5-6 pistachios, 2-3 green cardamom, few saffron strands and grind to a coarse powder.
      7. Add rest of the roasted lotus seeds in to the mixer jar and slightly crush them using the pulse option of the mixer grinder and keep aside. Or slightly crush them using your hand.
      Making Kheer Or Payasam:
      1. Heat 2 cups of milk to the same vessel in which the lotus seeds were roasted.
      2. When the milk is hot, add 1-2 tablespoon chopped almonds, 1-2 tablespoon chopped pistachios and the prepared lotus seeds mixture into it.
      3. Mix well and cook on low heat for 6-8 minutes. Don't forget to stir in between. Scrape the sides of the pan occasionally.
      4. Add 1/4 cup sugar to it and mix well, then cook on low heat for 2-3 minutes.
      5. Then add in the roasted cashew nuts and raisin, mix well.
      6. Remove from heat and keep it covered for 10 minutes.
      7. After 10 minutes, mix the Kheer Or Payasam well, serve and enjoy.
