Mongolian Chicken

Ingredients
  • Chicken thighs, Boneless and skinless - 500 Grams, 1.1 lbs, cut into small sized pieces
  • Vegetable Oil - 1/2 cup, to fry the chicken
For Marination:
  • Cornstarch or Corn Flour - 1/4 cup
  • Baking Soda - 1/4 Teaspoon
  • Black Pepper Powder - 1/2 Teaspoon
  • Salt - 3/4 - 1 Teaspoon, adjust according to your taste
For Sauce:
  • Cornstarch or Corn Flour - 1 Tablespoon
  • Brown Sugar - 2 Tablespoon
  • Dark Soy Sauce - 2 Tablespoon
  • Water - 1/2 cup
For Mongolian Chicken:
  • Vegetable Oil - 2 -3 Tablespoon
  • Garlic - 3 - 4 cloves, minced
  • Ginger - 1/2 inch piece, julinned
  • Dried Red Chillies - 5 - 6 Nos
  • Scallions / Spring Onions - 2 - 3 Nos, cut into 2 inch pieces
To garnish:
  • Scallion / Spring Onion Greens
Directions
    Initial Preparation:
    1. Clean and cut the chicken into small pieces. Wash well and drain the water completely. Set aside.
    2. Prepare the veggies and set aside.
    3. Prepare the sauce by mixing the ingredients mentioned in 'For Sauce' and set aside.
    4. Marinate the chicken pieces with the ingredients mentioned in 'For Marination' and set aside for 10 minutes.
    Frying chicken:
    1. Heat half a cup of vegetable oil in a pan.
    2. Once the oil is hot, add in the marinated chicken pieces in batches and cook for 3-4 minutes per side or until browned, and keep aside.
    Mongolian Chicken Preparation:
    1. Heat 2-3 tablespoon oil in a pan. If desired, the oil used to fry the chicken can be used.
    2. Add in the garlic, ginger and dried red chillies to the pan and sauté for a minute on medium heat.
    3. Then add in the Spring Onions and sauté for few seconds.
    4. Now add in the prepared sauce to the pan, mix well and cook until just thickened.
    5. When the sauce thickens, lower the heat, add in the fried chicken and toss well to coat with the sauce.
    6. Garnish with spring onion greens; Serve hot with fried rice and enjoy.
