Ingredients
- Chicken thighs, Boneless and skinless - 500 Grams, 1.1 lbs, cut into small sized pieces
- Vegetable Oil - 1/2 cup, to fry the chicken
For Marination:
- Cornstarch or Corn Flour - 1/4 cup
- Baking Soda - 1/4 Teaspoon
- Black Pepper Powder - 1/2 Teaspoon
- Salt - 3/4 - 1 Teaspoon, adjust according to your taste
For Sauce:
- Cornstarch or Corn Flour - 1 Tablespoon
- Brown Sugar - 2 Tablespoon
- Dark Soy Sauce - 2 Tablespoon
- Water - 1/2 cup
For Mongolian Chicken:
- Vegetable Oil - 2 -3 Tablespoon
- Garlic - 3 - 4 cloves, minced
- Ginger - 1/2 inch piece, julinned
- Dried Red Chillies - 5 - 6 Nos
- Scallions / Spring Onions - 2 - 3 Nos, cut into 2 inch pieces
To garnish:
- Scallion / Spring Onion Greens
Directions
Initial Preparation:
- Clean and cut the chicken into small pieces. Wash well and drain the water completely. Set aside.
- Prepare the veggies and set aside.
- Prepare the sauce by mixing the ingredients mentioned in 'For Sauce' and set aside.
- Marinate the chicken pieces with the ingredients mentioned in 'For Marination' and set aside for 10 minutes.
Frying chicken:
- Heat half a cup of vegetable oil in a pan.
- Once the oil is hot, add in the marinated chicken pieces in batches and cook for 3-4 minutes per side or until browned, and keep aside.
Mongolian Chicken Preparation:
- Heat 2-3 tablespoon oil in a pan. If desired, the oil used to fry the chicken can be used.
- Add in the garlic, ginger and dried red chillies to the pan and sauté for a minute on medium heat.
- Then add in the Spring Onions and sauté for few seconds.
- Now add in the prepared sauce to the pan, mix well and cook until just thickened.
- When the sauce thickens, lower the heat, add in the fried chicken and toss well to coat with the sauce.
- Garnish with spring onion greens; Serve hot with fried rice and enjoy.
