Pazham Pori – Beef Roast Combo Puffs | Ripe Plantain and Beef Roast Puffs

Ingredients
  • Puff pastry - 2 sheets, cut each sheet into 4 squares
For Beef Roast:
  • Boneless Beef - 250 grams, cut into small cubes
  • Onion - 1 small, 100 grams, roughly chopped
  • Tomato - 1 small, 50 grams, roughly chopped
  • Garlic - 4 cloves
  • Ginger - 1/2 inch piece
  • Green chilli - 1 - 2 Nos
  • Kashmir chilli Powder - 1 Tablespoon
  • Coriander powder - 1/2 Tablespoon
  • Black pepper powder - 1/2 Teaspoon
  • Garam masala Powder - 1/2 Teaspoon
  • Fenugreek Powder - 1/8 Teaspoon
  • Turmeric powder - 1/4 Teaspoon
  • Salt - 1/2 - 3/4 Teaspoon, adjust according to your taste
  • Lime Juice - 1 Teaspoon
  • Curry leaves
  • Coconut oil - 1 Tablespoon
For Plantain Roast:
  • Fully ripe Plantain - 1 medium - large, cut into half, then slice each portion into 4 slices.
  • Ghee - 1 Tablespoon
For Puffs assembly:
  • Chopped Onion - 1/4 Cup
  • Chopped Tomato - 1/4 Cup
  • Egg White - 1
Directions
    Beef Roast Preparation:
    1. Cut the boneless beef into small cubes, clean and wash, drain the water completely.
    2. Crush together the garlic, ginger and green chillies and keep aside.
    3. Add the beef cubes to a pressure cooker.
    4. Add in the chopped onion, chopped tomato, curry leaves, crushed ginger-garlic-green chillies.
    5. Then add in the Kashmiri chili powder, Coriander powder, Black pepper powder, Turmeric powder, Garam masala powder, a pinch of Fenugreek powder, enough salt and lime juice and mix well.
    6. Keep it aside for 15-20 minutes. After that, cook it on medium heat for about 5-6 whistles or until the beef is cooked well.
    7. Once the pressure of the cooker is completely released, add in the coconut oil and roast the beef well until all the water dries up. Set aside.
    Plantain Roast Preparation:
    1. Take a medium sized ripe plantains and cut in half. Then cut each portion into 4 slices.
    2. Now heat ghee in a pan. Once the ghee is hot, add the sliced plantain pieces and roast on medium heat until both sides turn light golden brown in color and set aside.
    Puffs Assembly & Baking:
    1. Preheat the oven to 400°F.
    2. Line the baking pan with parchment paper and set aside.
    3. Thaw the puff pastry sheets as instructed in the package.
    4. Spread the puff pastry sheet slightly using a rolling pin, to get the correct square shape.
    5. After that cut each puff pastry sheet into 4 pieces and keep aside.
    6. Then take a puff pastry piece, place a slice of roasted plantain on it, then spread one and a half tablespoon of beef roast, add some chopped onions and tomato on top.
    7. Now apply a little water on the edges of the puff pastry piece and seal the edges properly.
    8. Prepare the rest of the puffs in the same way and arrange them on a baking sheet.
    9. Now beat an egg white and brush it over the prepared puffs.
    10. Bake for about 15 to 20 minutes or until the top of the puffs is crispy and golden brown.
    11. Then remove it from oven, serve warm.
