Ingredients
- All purpose flour Or Maida - 1 cup
- Ground pistachios - 1/2 cup
- Salt - 1/8 Teaspoon
- Unsalted Butter - 1/2 cup, at room temperature
- Powdered Sugar - 1/2 cup
- Vanilla Essence - 1 Teaspoon
- Finely chopped Pistachios - 1/4 cup
- Powdered Sugar, for rolling - 3/4 cup
Directions
Cookie Dough Preparation:
- In a bowl, mix together the All-purpose flour, ground pistachios, salt and set aside.
- In a mixing bowl, beat together the butter and powdered sugar on medium speed until smooth and creamy for about 2-3 minutes. Scrape down the sides of the pan occasionally.
- Add in the vanilla essence and beat on medium speed until incorporated well.
- Now add the prepared dry ingredients mixture into this and mix until well combined.
- Then add in 1/4 cup finely chopped pistachios and combine well to make a dough.
- Now cover the bowl with a plastic wrap and keep it in the refrigerator for 30 minutes.
Cookie Arrangement, Baking and Storage:
- Preheat oven to 350°F Or 180°C.
- Line a baking tray with parchment paper and set aside.
- Now take the cookie dough from the refrigerator, scoop one tablespoon sized portions, shape into balls, and arrange them on the prepared baking tray by leaving a gap of 2 inches in between. You can make about 18 to 20 cookies from this.
- After that, bake them in the preheated oven for about 10-12 minutes, or until the bottom side of the cookies turn light brown in color.
- Once the cookies are ready, take out the tray from the oven and keep the cookies on the baking tray for 10 minutes.
- Then transfer the cookies to a wire rack, set aside and allow to cool completely.
- Take 1/2 cup of powdered sugar on a plate and gently roll each cookie in the powdered sugar to coat completely.
- Enjoy the sweet 'melt-in-mouth' experience! For storage, cookies can be kept in an air tight container.
