Pomegranate Barfi, Pomegranate Kaju Katli Recipe

Ingredients
  • Cashew Nuts - 2 cups Or 300 Grams
  • Pomegranate Juice - 1/2 cup
  • Sugar - 1 cup
  • Ghee - 1 Teaspoon
  • Few edible Silver leaf sheets, optional
Directions
  1. Put the cashew nuts in a mixer jar, and grind to a fine powder using the pulse option of the mixer grinder. The cashew nuts turn lumpy, if you process the mixer grinder for a long time. So make sure to use the pulse option to grind the cashews.
  2. If you want a soft and smooth textured Barfi, sieve the cashew powder and grind the coarse particles. Continue the process until you get most of the cashew nut powder and set aside.
  3. Take sugar in a heavy bottomed pan, add in the pomegranate juice and mix well.
  4. Boil on medium heat until one string consistency attained. Stir in between.
  5. Now add in the cashew nut powder and combine well without any lumps.
  6. Continue stirring until slightly thick. Then add in one teaspoon ghee and mix well.
  7. Cook until the cashew mixture becomes thick and starts to leave the sides of the pan. Then lower the heat and check the consistency. To check the consistency, take a small portion of the mixture into a bowl and allow to cool slightly, then try to make a ball out of the mixture. If you are able to make the ball without sticking it in your fingers, that's the right consistency.
  8. Now transfer the mixture to a greased plate and let it cool down a little.
  9. While the mixture is still warm, knead the mixture for few minutes to form a soft dough.
  10. Once the dough is done, transfer it to a parchment paper.
  11. Gently roll the dough using a rolling pin to all the sides and make a 1/4 to 1/2 inch uniform thick sheet.
  12. Now place some edible silver leaf sheets on top of it. It's completely optional.
  13. Cut it into desired shapes, separate the Pomegranate Barfi pieces and enjoy.
  14. You can store the Pomegranate Barfi for a month when stored in an airtight container.
NOTES
    For best Results,
    1. Try to use premium quality whole cashews.
    2. Boil the sugar syrup until one string consistency. To check the sugar syrup consistency, take a drop of syrup between your forefinger and thumb and gently pull your fingers apart, one string will be formed and it will be firm. This is one string consistency.
