Trivandrum style Chicken Fry

Ingredients
  • Chicken - 1 Kg, cut into medium sized pieces
  • Coconut Oil, for Frying - 1 cup
For Marination:
  • Crushed Ginger - Garlic - 2 Tablespoon
  • Red Chilli Flakes - 1 Tablespoon
  • Fennel Seeds - 1/2 Tablespoon
  • Rice Powder - 1 Tablespoon
  • Corn Flour - 1 Tablespoon
  • Turmeric powder - 1/2 Teaspoon
  • Black Pepper Powder - 1 Teaspoon
  • Red Chilli Powder - 1/2 Tablespoon
  • Kashmiri Chilli Powder - 1 Tablespoon
  • Garam Masala Powder - 1/2 Tablespoon
  • Salt - 1 Teaspoon , adjust
  • Lime Juice - 1 Tablespoon
  • Yogurt - 2 Tablespoon
  • Curry Leaves - 1 sprig
For Masala:
  • Onion - 2 medium, thinly sliced
  • Curry leaves - 1 sprig
  • Tomato - 1 medium, chopped
  • Crushed Ginger & Garlic - 1 Tablespoon
  • Red Chilli Flakes - 1/2 Tablespoon
  • Black Pepper Powder - 1/2 Teaspoon
  • Coconut oil - 2 - 3 Tablespoon
  • Chopped Coriander leaves - 1 - 2 Tablespoon
  • Salt to taste
Directions
    Initial Preparation:
    1. Clean and wash the chicken pieces, drain the water completely.
    2. In a bowl, add the chicken pieces, and the ingredients mentioned in 'For Marination' and mix well.
    3. Set aside for at-least 1 to 2 hours, or keep it overnight in the refrigerator for best results.
    Frying Chicken:
    1. Heat 1 cup of coconut oil in a heavy bottomed pan. Once the oil is hot, set the heat to medium.
    2. Add in the marinated chicken pieces as batches, fry for about 6-8 minutes on medium heat .
    3. Then flip to the other side and fry for another 6-8 minutes or until the chicken is deep golden in color.
    4. Transfer to a bowl. Continue the process to fry all the chicken pieces and set aside.
    Masala Preparation:
    1. Heat 2 to 3 tablespoons of coconut oil in a pan.
    2. Add in the sliced onions, curry leaves, enough salt and saute until the onions become translucent.
    3. Then add in the chopped tomatoes, crushed ginger-garlic and saute until the tomatoes are mushy and the raw smell of the ginger and garlic disappears.
    4. Now add in the red chilli flakes, black pepper powder and fry for 1 -2 minutes.
    5. Then add in the fried chicken pieces and toss well.
    6. Sprinkle the chopped coriander leaves on top and serve hot.
